One-pot recipes for Portuguese Potluck! Our Global Cuisine Potluck next month – Saturday, June 14th – may add some new favorites to everyone’s repertoire of home recipes. According to “A Taste of Portugal” at http://portuguesecuisine.
blogspot.com, this is a cuisine that is both simple to prepare and rich in flavor.
“Portuguese food is renowned for being lusty and robust,” writes blogger Sara Elliott. “Because it is easy to prepare and uses very basic equipment, it is often described as peasant food. Some of the most popular Portuguese dishes can be made in a single pot over an open fire. The use of seasoned pork, strong olive oil, garlic and onions contributes to the image of strongly flavored, simple cooking. This is Sunday dinner fare designed to satisfy the appetite and reinforce the bonds of home and family.”
Recipes that you will find in the folder on the Time and Talent Table include: Kale soup, Portuguese Gazpacho, Portuguese Paella, Tilapia a la Portuguesa, Rosemary and Lemon Pork Stew, Andalucian Pinchitos Morunas (Moorish Saffron Meat skewers), Portuguese Cod Casserole, Portuguese Sweet Bread for the Bread Machine, Portuguese Coconut-custard Tarts, Portuguese Sponge Cake and Molotoff Pudding (from Traditional Portuguese Pudding book).
Any dish is welcome at this potluck, not just Portuguese. What is important is to arrive by 6 (earlier if your food needs to be reheated) and to bring a few friends. Don’t forget to bring your own beverages. Non-cooks are always welcome to help us clean up.
